Why This Himalayan Vedic Yak Ghee Exists

Our Himalayan Vedic Yak Ghee begins with milk from yaks raised across the high-altitude landscapes of the Himalayas, where short summers, long winters and sparse alpine vegetation shape a completely different way of life. At elevations of approximately 3,200–4,000 metres, these animals graze in open mountain pastures on naturally occurring grasses, alpine plants and seasonal vegetation available to them. We make our ghee in small batches, following the traditional process of transforming cultured butter into clarified golden ghee over gentle heat. The slow clarification allows water and milk solids to separate naturally, leaving behind a rich, aromatic and clean-tasting ghee. What makes it special is not simply its high-altitude origin. Its character begins with the animal, the pasture, the altitude and the traditional knowledge surrounding it. Every batch carries the distinctive depth of food shaped by the high Himalayas.     The Herd Grazes

    Indigenous cows graze freely on Himalayan pastures at 2,400–4,000 metres. The altitude, herbs and open grazing define the milk.

    Morning Milking

    Milk is collected by hand each morning by herding families. No machines, no industrial process. Just the relationship between family and animal.

  3. 03

    Curd & Culture

    Fresh milk is cultured into curd using traditional starters passed down through families. This step is what separates Bilona ghee from all others.

  4. 04

    Hand Churned

    Curd is hand-churned the traditional way — slowly, by hand — to separate butter. This is the Bilona method, unchanged for centuries.

  5. 05

    Slow Clarified

    Butter is slow-cooked over a wood fire until golden and pure. No shortcuts. The result is ghee that carries the memory of every step before it.
