The Ancient Art of Bilona Ghee Making
23 October 2026
For centuries, families in the Himalayan valleys have made ghee the Bilona way — slowly, by hand, with patience that modern commerce has no room for.
Most ghee in the market is made from commercial dairy — pasteurised milk, industrial churning, mass production. Ours is not.
What is Bilona Ghee?
Bilona is an ancient Vedic method of making ghee. The word "Bilona" comes from the Sanskrit word for the wooden churner used to hand-churn curd into butter.
The Process
The process takes five days and involves these steps:
- Fresh milk is collected from free-grazing cows at altitude
- Milk is cultured into curd using traditional starters
- Curd is hand-churned slowly to separate butter
- Butter is slow-clarified over a wood fire
- The result is pure, golden Bilona ghee
Why It Matters
The Bilona method preserves the nutritional integrity of the ghee. The slow process retains natural vitamins, antioxidants and healing properties that are destroyed in industrial production.
When you choose Bilona ghee, you are not just buying a product. You are honoring a tradition that has sustained Himalayan families for generations.
